Baked Halibut Supreme

Ingredients:

  • 3 lbs fresh or frozen Halibut
  • Butter
  • Salt
  • Pepper
  • 1/2 cup Parmesan Cheese
  • 4 strips of Bacon
  • 1 tsp Lemon Juice
  • 1 cup Sour Cream
  • 1/3 cup buttered Bread Crumbs
  • Chopped Parsley
Directions:

Rub halibut with butter, salt and pepper. Lay bacon on bottom of baking pan and place fillets of top. Make a mixture of sour cream, cheese, crumbs and lemon juice. Spread over the fish. Bake halibut at 350F until tender (20 to 30 minutes). Serve baked halibut sprinkled with grated cheese and parsley. Serves 6 to 8.



Deep-Fried Alaska Halibut

Ingredients:

  • 2 lbs. Alaska Halibut chunks OR Alaska Razor clams
  • 1 cup flour
  • 1 egg
  • 1 tablespoon butter, melted
  • 1/2 cup beer
  • Pinch cayenne pepper
  • Pinch salt
  • Pinch garlic salt
  • 3-4 cups Japanese Panko crumbs
  • Enough oil for deep-frying
  • Tartar sauce
  • Seafood sauce
  • 1 lemon
Directions:

Mix everything. Put the halibut, Panko crumbs, oil, tartar sauce, seafood sauce and lemon in a mixer and let set at room temperature for 3-4 hours. Dip the halibut or clams in the batter, roll in Panko crumbs and deep-fry to a golden brown, turning once. Serve with lemon wedges, tartar sauce, and seafood sauce.

Parmesan Baked Halibut Recipe

Ingredients:

  • 2 halibut steaks
  • 1 tablespoon oil
  • 6 tablespoons grated parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh cracked pepper
  • 2 tablespoons flour
  • 1/2 teaspoon paprika
  • 2 tablespoons milk
  • 1 large egg
Directions:

Coat baking dish with oil.
Rinse and dry fish.
Combine Parmesan cheese, flour, salt, pepper and paprika in a bowl.
In a separate bowl, beat egg and milk together.
Dip halibut into egg mixture, then coat with Parmesan cheese mixture.
Bake at 500 degrees until halibut is opaque (approximately 15 minutes).
Be careful not to overbake.

Baked Halibut

Ingredients

  • 1 halibut steak, 2 to 3 pounds
  • 1/4 cup flour
  • salt and pepper
  • 3 to 4 tablespoons butter
  • 8 ounces sliced mushrooms
  • 1 small bay leaf
  • 1/2 cup thinly sliced onion
  • 1 clove garlic, cut in half
  • 1 cup dry white wine
  • 1 cup heavy cream
  • chopped fresh parsley
Preparation:

Put flour in a shallow bowl; season with salt and pepper. Dredge halibut with the seasoned flour. Place halibut steak in a buttered baking dish; dot with 3 to 4 tablespoons of butter. Bake at 350° for about 20 minutes, basting several times. Sprinkle halibut steak with mushrooms, onions, bay leaf, garlic pieces, and wine. Cover baking pan with foil, buttered so it will not stick to the halibut, and bake 20 minutes longer, basting a few times. Transfer halibut, mushrooms, and sliced onion to a warm serving platter; discard garlic pieces and bay leaf. Add heavy cream to the liquid remaining in pan; heat to boiling point. Taste and add salt and pepper to taste and pour over halibut steak. Sprinkle with chopped fresh parsley.
Baked halibut serves 4 to 6.



Halibut With Horseradish Recipe

Ingredients

  • 2 pounds halibut, cut in 2 pieces
  • 1 cup horseradish, fresh if possible, grated
  • 1 onion, peeled, chopped
  • 3 tablespoons butter
  • 1/3 cup water
  • Seasonings to taste
Instructions:

Put all ingredients in a baking pan.
Bake in moderate oven for 20 minutes.
Then serve.



Stuffed Salmon, Halibut Or Fish Fillets Recipe

Ingredients:
  • 1-½ pounds fish sliced½ inch thick or 2 medium sized fish fillets
  • Celery or tomato breadstuffing
  • Salt and pepper
  • ½ tablespoon corn syrup
  • ¼ cup corn oil
Instructions:

Halibut, Remove the bones and skin.

If sliced fish is being used, cut in halves.

Put one in a baking pan well oiled with corn oil, dust with salt and pepper, put on a layer of dressing, then one of fish, then layer of dressing, and bake in a hot oven forty to fifty minutes according to thickness of the fish, basting often with the corn oil and corn syrup, combined with one-half cup boiling water.

Serve on a platter with a garnish of sliced lemon and accompany with French Fried Egg Plant, Squash or Cucumbers.

Barbeque Halibut Steaks

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 2 teaspoons soy sauce
  • 1/2 teaspoon ground black pepper
  • 1 (1 pound) halibut steak
Directions:

Preheat grill for medium-high heat. Place butter, brown sugar, garlic, lemon juice, soy sauce, and pepper in a small saucepan. Warm over medium heat, stirring occasionally, until sugar is completely dissolved. Lightly oil grill grate. Brush fish with brown sugar sauce, and place on grill. Cook for 5 minutes per side, or until fish can be easily flaked with a fork, basting with sauce. Discard remaining basting sauce.
